Eggcellent...

Beautiful and bountiful eggs!

All the chickens seem to be marveling in the shift of daylight hours and warm weather this winter has been providing. We have 6 chickens now, down a couple over the winter due to predators, but all seem to be providing eggs. So many eggs each day we are back to sharing and eating all sorts of eggcellent dishes. We are thankful for these delicious, nutritious eggs our ladies are providing us and are happy to learn that they are full of essential Vitamin D. See below information from Mother Earth News…

"Eggs from free-range hens contain three to six times more vitamin D than typical supermarket eggs, according to a new study conducted by Mother Earth News magazine. Results showed that free-range eggs were richer in vitamin D than the U.S. Department of Agriculture nutrient data on commercial eggs, which are produced indoors in factory farms. According to the USDA, commercial eggs have 34 IU (international units) per 100 grams. Based on the Mother Earth News findings, two eggs from free-range/pastured hens could provide 63 to 126 percent of the recommended daily intake of vitamin D."

Nothing but fun around this joint with the chickens as Jon has taken delight in teaching Chapin what a pun is and “egg” is being thrown around quite a bit.

Also, we are thankful for this extra boost of Vitamin D, as Chapin has been sick since Thursday and has not seen outside till today. He even missed school for the first time all year. He found all sorts of lovely places to take some "cat naps" to rest his little body.  Happy he is feeling better.
For all that know Chapin he never naps, so you know he is sick when he crashing on the couch..

or the bean bag chair!
